  • Author: Hannah Ellis
  • Total Time: 39 minute

Ingredients

– 1 cup mixed dried fruit (raisins, currants, sultanas)
– 1 cup mixed peel
– 1/2 cup chopped nuts (walnuts or pecans)
– 1/2 cup breadcrumbs
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon allspice
– 1/2 cup brown sugar
– 1/2 cup unsweetened applesauce
– 2 large eggs
– 1/4 cup dark rum or brandy
– Zest of 1 lemon
– Zest of 1 orange
– 1/4 cup milk

Instructions

Making Christmas Pudding is an enjoyable process when you follow these straightforward steps:

1. Prepare the Dried Fruit: In a bowl, combine mixed dried fruit, mixed peel, and chopped nuts. Set aside.
2. Mix Dry Ingredients: In a separate bowl, sift together flour, baking powder, cinnamon, nutmeg, allspice, and brown sugar.
3. Combine Wet Ingredients: In another bowl, whisk together applesauce, eggs, rum or brandy, lemon zest, orange zest, and milk until well blended.
4. Combine Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
5. Add Dried Fruit: Gently fold in the prepared dried fruit and nuts, ensuring they are evenly distributed.
6. Prepare the Pudding Basin: Grease a 1.5-liter pudding basin and place a circle of parchment paper at the bottom.
7. Fill the Basin: Spoon the pudding mixture into the basin, pressing it down gently to remove air pockets.
8. Cover: Place a piece of parchment paper over the top, followed by a layer of aluminum foil. Securely tie with kitchen twine.
9. Steam the Pudding: Place the pudding basin in a large pot with simmering water, ensuring the water reaches halfway up the sides of the basin. Steam for 6-8 hours, topping up with water as needed.
10. Cool: Once cooked, remove from the pot and allow to cool for about an hour before storing it in a cool, dark place.
